Egg & cress club sandwich

Ingredients: – 6 slices of bread (white, whole wheat, or your preference) – 4 hard-boiled eggs, sliced – 1 cup watercress, washed and trimmed

– 6 slices of cooked bacon – 1 ripe tomato, thinly sliced – Mayonnaise – Salt and pepper to taste

Toast the bread slices until golden brown and crisp. Spread mayonnaise evenly on one side of each toasted bread slice.

Arrange the sliced hard-boiled eggs on three of the bread slices, followed by a layer of cooked bacon on top.

Season the tomato slices with salt and pepper, then place them on top of the bacon.

Add a generous handful of watercress on top of the tomato slices.  Place the remaining three bread slices on top to create three sandwiches.

Carefully cut each sandwich into quarters to create smaller triangular club sandwiches.

Secure each sandwich quarter with toothpicks to hold the layers together.

Serve the Egg & Cress Club Sandwiches immediately as a delicious and satisfying meal or snack.
