Whisk the flour, baking soda, salt, and unsweetened cocoa powder together in a large bowl. Put away.

Mix the butter, brown sugar, and granulated sugar for 1-2 minutes with a handheld mixer or stand mixer with the paddle attachment. Add egg and vanilla.

Scrape the bowl sides as you slowly add the dry ingredients and mix until just combined. Mix in chocolate chips slowly. Refrigerate cookie dough for an hour.

Preheat the oven to 350°F (177°C). Line two large baking sheets with parchment or silicone. Get the dough from the fridge. Scoop 1.5 tablespoons of cookie dough onto baking sheets.

Bake until cookie tops are set, 8-10 minutes. Remove from oven, cool on baking sheet for 10 minutes, then transfer to wire rack to finish cooling.
