Double Blueberry Pancake

Ingredients: – 1 1/2 cups all-purpose flour – 2 tbsp granulated sugar – 1 tbsp baking powder – 1/2 tsp salt – 1 cup milk

– 2 large egg – 2 tbsp unsalted butter, melted – 1 tsp vanilla extract – 1 cup fresh blueberrie – Butter or oil for cooking – Maple syrup for serving

Mix Dry Ingredients:  Combine flour, sugar, baking powder, and salt in a bowl.

Mix Wet Ingredients:  Whisk milk, eggs, melted butter, and vanilla in another bowl.

Combine:  Gently mix wet and dry ingredients until just combined.

Fold in Blueberries:  Carefully fold in 3/4 cup blueberries.

Cook:  Pour batter onto greased griddle over medium heat. Add extra blueberries on top. Cook until golden on both sides.
