Buffalo Chicken Meatballs

Ingredients: For the Meatballs: – 1 lb ground chicken – 1/2 cup breadcrumb – 1/4 cup grated Parmesan cheese – 1/4 cup finely chopped green onion – 1 large egg

– 2 cloves garlic, minced – 1 teaspoon paprika – 1/2 teaspoon onion powder – 1/2 teaspoon dried parsley – Salt and pepper to taste – Cooking spray or olive oil for greasing

For the Buffalo Sauce: – 1/2 cup hot sauce (such as Frank's RedHot) – 1/4 cup unsalted butter, melted – 1 tablespoon honey (optional, for sweetness) – 1 teaspoon Worcestershire sauce

For Serving (Optional): – Ranch or blue cheese dressing for dipping – Celery sticks and carrot stick

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and lightly grease with cooking spray or olive oil.

Prepare Meatball Mixture: In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan cheese, chopped green onions, egg, minced garlic, paprika, onion powder, dried parsley, salt, and pepper.

Shape Meatballs: Scoop out tablespoon-sized portions of the meat mixture and roll them into balls using your hands. Place the meatballs on the prepared baking sheet, leaving a little space between each one.

Bake Meatballs: Transfer the baking sheet to the preheated oven and bake the meatballs for 15-20 minutes, or until they are cooked through and golden brown on the outside.

Make Buffalo Sauce: While the meatballs are baking, prepare the buffalo sauce. In a small bowl, whisk together hot sauce, melted butter, honey (if using), and Worcestershire sauce until well combined.

Coat Meatballs: Once the meatballs are done baking, remove them from the oven and transfer them to a large mixing bowl. Pour the buffalo sauce over the meatballs and gently toss them until they are evenly coated.

Serve: Arrange the buffalo chicken meatballs on a serving platter and garnish with chopped green onions or parsley, if desired. Serve with ranch or blue cheese dressing for dipping, along with celery and carrot sticks on the side.
